We’ve been hyped about Roma for months now – not least because the team behind the soon-to-open venue is pretty much a who’s who of storied Melbourne restaurants. 

 

The Collins Street spot is the latest offering from Melbourne hospitality legend Con Christopoulos, whose stable of venues includes Hot-Listed KafeneionSigloThe EuropeanBossa Nova Sushi, French Saloon and Angel Music Bar. Matt Wilkinson (co-founder of Pope Joan) is onboard as chef and co-owner, and Giovanni Patane (co-founder of Supermaxi) will oversee the floor. Together, they’ve crafted a love letter to the Eternal City that’s equal parts grit and glamour – overlaid with old-world hospitality.

 

Thanks to Broadsheet Access, you’re invited to be first through the door for our exclusive Roma readers’ preview dinner on May 20 – the eve of the restaurant’s official public opening on May 21.

 

Hosted by Christopoulos himself in a freshly fitted out space inspired by artisan masonry and vintage sourcing – and designed to channel the rowdy, casual energy of a local Italian haunt – the dinner will riff on the Roman tradition of turning offal and “poor” cuts into sophisticated delicacies.

 

Guests can enjoy a complimentary spritz, sparkling or stiff G&T on arrival, served with olives, veg and roast chestnuts. Entrees include prosciutto San Daniele with local capocollo and warm bread, and supplì al telefono (croquettes stuffed with rice, mozzarella and tomato). 

 

Then it’s onto mains – including trippa alla Romana (tripe stew, a staple of Quinto Quarto cuisine) and pesce del giorno (rock flathead, steamed and baked). You’ll also want to save room for dessert: fior di latte gelato and amarena wild cherries or frutta di stagione (fresh persimmon and pear) with Romcaffe espresso.

 

While you dig in, you’ll hear all about the new operation during a candid Q&A with Christopoulos, Wilkinson and Broadsheet’s Australia editor Nick Connellan – including plans for sibling venue Sergio’s, a late-night haunt and record store named for Italian filmmaker Sergio Leone that’s set to open in June.
