Be one of the first to try the new French bistro from the team behind Aria, Chiswick, Opera Bar and the Paddo Inn. Expect a one-off menu curated just for members and a Q&A with the restaurant’s head chef.
Chez Blue is a chic new inner-west bistro that we’ve described as a “Parisian dream”. Located on Rozelle’s buzzy Darling Street, the new addition to the Solotel stable is decked out with booths, banquettes, an adjoining cocktail bar and lighting sourced directly from a vintage market in Paris.
The kitchen is headed up by Mark Williamson (ex-head chef at Woollahra institution Bistro Moncur), who’s serving up subtle twists on French classics. Expect niçoise reimagined as a fresh tuna tartare; a savoury peach Melba; a croque monsieur with melted Comté for dipping; and a chicken-liver pate served with a bruléed top to crack. Plus, larger plates such as steak frites and a saddle of Gundagai lamb roasted whole and carved to order.
You’ll be one of the first to experience Chez Blue when it opens exclusively to Access members for an Editors’ Preview dinner – the night before its official opening. Mingle with a glass of bubbles before sitting down for a three-course set menu curated just for members. Choose from the tuna tartare niçoise or chicken liver brûléefor entrees, the dory fillet or lamb saddle for mains, and a lemon tart or Paris-brest to finish.
Between courses, you’ll hear Williamson and Solotel CEO Elliot Solomon in conversation with Broadsheet Sydney food and drink editor Grace MacKenzie.
