A new restaurant is rewriting the rulebook on wine – and Access members will have the chance to explore this vinous venue before it opens to the public.

 

Opening on Punch Lane, Circl will provide Melbournians with a new destination to try some of the world’s most highly regarded wines. But rather than hiding these out of sight, Circl is shaping its unique offering around accessibility, inclusivity and discovery. 

 

Award-winning head sommelier and venue manager Xavier Vigier has curated the 125-page wine list featuring 1,500 rare and allocated wines. However, Circl is changing the status quo by offering many of these rare bottles by the glass, allowing guests to sample them at a more affordable price without committing to the full bottle. Sparkling more your thing? The venue also hosts over 130 bottles of champagne, available for all occasions. 

 

A fine drop isn’t all that’s on the menu. Directing Circl’s kitchen is executive chef Elias Salomonsson, who has shaped the venue’s food offerings with a nod to Sweden, and using both local and seasonal Australian produce. Each dish is designed to be a standalone meal – perfect for any pre-theatre dinner, wine tasting accompaniment, or late-night craving. Expect options like tuna crudo with Yarra Valley caviar, dill and buttermilk as an entree, Loddon estate duck with Davidson’s plum barbeque sauce for a main, and to finish, a silky vanilla parfait with wattleseed and macadamia praline.
