Renowned seafood chef Josh Niland invites you to celebrate the launch of his new book, Fish Butchery, with a seven course tasting menu with matched wines at Saint Peter.
Josh Niland has been a game changer in the way Australia thinks about fish. Passionate about seafood sustainability, the ground-breaking chef has pioneered practices that use as much fish as possible, beyond just the fillet. These innovative techniques are now laid out in his new book Fish Butchery, both a recipe book and a guide to cooking with intention.
In an intimate group of just 18 at his sustainable fish eatery Saint Peter, Niland will introduce his book and talk about its philosophy. Hear first-hand about Niland’s inspiration for developing his practices, and learn about the unknown possibilities for cooking with seafood.
You’ll be treated to a glass of champagne upon arrival, then enjoy a tasting menu drawn from the book’s recipes, with wines to match.
