On October 25, sustainability-focused pop-up hub Space of Waste exclusively invites Access members to Salvage & Savour: Cremorne. The immersive, one-night-only event brings together some of Cremorne’s best eateries, serving up culinary creations showcasing responsible practices and low-waste techniques.
Expect a selection of canapés from one of the year’s best new restaurants, Lilac Wine; sunny salad bar Green-On, whose motto is “eat for impact”; and cult bakery Tarts Anon, with contributions from Hunted & Gathered and Rooftop Honey. On arrival, there will also be a non-alcoholic cocktail from Lilac and wines by Smith Street's sustainable wine bar and shop Glou, plus additional beverages for purchase.
The highlight of the night will be a casual panel chat about the future of food, farming, food waste and the blueprint of cities and neighbourhoods striving for self-sustainability. You’ll hear from hospitality heavyweight Nathan Toleman (the man behind Lilac, Hazel and Common Ground Project, and formerly Higher Ground and Top Paddock), Frankie Cox (Green-On) and Jean Darling from food waste enterprise Cirque du Soil. All three speakers currently work within the Cremorne community to address food system issues and work towards a more livable future.
Members are then welcome to explore the “Space of Waste” – a collaborative co-workspace and hub constructed entirely with salvaged materials from the NGV’s Alexander McQueen exhibition and Rising Festival – at any stage of the evening.
