A Guided Meat-Free Degustation Inspired by Mediterranean Wine Culture

Patsy’s is a new venture by Matthew Guthrie, James Langley and Clinton Trevisi (Bistro Elba, Donna Maria) in the heart of Melbourne’s CBD. Everything’s sourced from artisanal producers, vendors from the Victoria market, as well as Patsy’s garden in Daylesford. But the star of the show here is the European-centric, sustainability-focused wine list, chosen by wine director Sebastian Zotti (ex-Prince Wine Store). There’s a rotating selection of 18 wines by the glass, which are entirely free of animal products.
At one of Patsy’s best tables, a top sommelier will hand-pick four incredible sustainable wines for you to try. Then, they’ll work with the chefs to curate a unique meat-free menu around their selection and your tastes. The sommelier will personally guide you through each course, revealing the story and inspiration behind the food and wines.
You might taste a rosé from Corsica matched with necci, a traditional chestnut crepe made with roasted chestnut flour milled in-house. Or, gougeres filled with brebirousse cheese paired with a glass of delicate Yarra Valley sparkling. But all will be revealed on the night as the menu is ever-evolving.
To finish, expect a nightcap of amaro or a specialty liquor with a surprise dessert.
